These crunchy squash rings make a great appetizer or a fun twist to a starchy side dish.Serves 4
2 small delicata squash
1-2 Tbsp extra-virgin olive oil
Salt + Pepper
Dried Thyme
1.Wash & dry squash.Slice in ¼“ pieces to create thin rings.
2.Place in a single layer on 2 baking sheets and brush with oil.Sprinkle with salt, pepper and dried thyme.
3.Bake at 325 for 20 minutes, flipping half-way.
