Delicata "Onion" Rings

These crunchy squash rings make a great appetizer or a fun twist to a starchy side dish.  Serves 4

2 small delicata squash

1-2 Tbsp extra-virgin olive oil

Salt + Pepper

Dried Thyme


1.     Wash & dry squash.  Slice in ¼“ pieces to create thin rings.

2.     Place in a single layer on 2 baking sheets and brush with oil.  Sprinkle with salt, pepper and dried thyme.

3.     Bake at 325 for 20 minutes, flipping half-way.
