Cardamom Pecan Crumble
Pecans, the star of this recipe, contain epigallocatechin 3-gallate, better known as EGCG, the primary flavanol found in green tea. Studies have shown EGCG to be effective in stunting cancer cell growth and promoting healthy fat metabolism.
1 ½ cups raw pecan halves
1 cup pitted Medjool dates (about 12)
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cardamom
1. Place pecans into a food processor bowl fitted with an ‘s’ blade. Pulse until nuts are finely ground.
2. Add the dates and spices and process until mixture is uniform (may crumble to touch but will stick together when rolled).
3. Transfer mixture into a 8X8 baking dish and press flat. Refrigerate for 4-5 hours, cut into 12 squares.
