Caramelized Onion Cannellini Bean Dip

Bring this dip to your next tailgate party for a dip that is tasty and nutritious!  Makes 2 cups

1 tablespoon extra-virgin olive oil

1 sweet onion, sliced

1 sprig fresh rosemary

1½ cups (1 can) cooked cannellini beans, drained and rinsed

2 cloves garlic

2 teaspoons freshly-squeezed lemon juice

Ground pepper to taste


1.    Over medium heat, heat olive oil in skillet.  Add onions and rosemary sprig; sauté until very soft.  For a true caramelization, add a dash of sugar. Remove rosemary stem.

2.    Add onion and all other ingredients to food processor and blend until smooth.

-If you can't find fresh rosemary, ground rosemary works well too.  Use the fresh-to-dried herb conversion below:

                        1 Tablespoon fresh herbs = 1 teaspoon dried herbs
